lemon gold popsicles

Writer and illustrator Parusha Naidoo shares her favourite summery lemon-inspired recipe

ingredients

makes approx 6

– 1 cup lemon juice 

– 1 can coconut milk

– 2 T zest of one lemon

– 1 T desiccated coconut

– 5 T sugar or any sweetener

– 1 t ground turmeric

– marigold petals (or other edible flowers)

– wooden ice cream sticks

method

– Whisk together all the ingredients (except petals).

– Add the marigold petals into the popsicle molds.

– Pour the mixture into molds and freeze for 1 hour. 

– Then insert the sticks and freeze until solid.

– Enjoy and stay cool! ;)
